Steamed Chicken Balls (SERVES 4) Recipes

Ingredients

250gms chicken breast (or lean chicken mince)
250 low fat ricotta
1 egg, beaten
½ cup fresh breadcrumbs
1 lemon, bested
1 tabs mint, chopped
1 tabs coriander (or basil), chopped
1 onion, finely chopped
2 teaspoons chilli

Yoghurt dipping sauce:
1 cup non fat plain yoghurt
1 tabs sweet chilli sauce
1 tabs mint, chopped
1 tabs coriander or basil, chopped

Combine all ingredients and chill.

Method

  1. If you have food processor, process chicken breast then add rest of ingredients and blend until well combined
  2. Chill the mixture for 10-15 minutes in the fridge.
  3. Form into small balls, about a heaped tablespoon.
  4. Place in top of steamer basket over simmering water and cook for about 8-10 minutes.
  5. Serve with dipping sauce
