Ingredients
250gms chicken breast (or lean chicken mince)
250 low fat ricotta
1 egg, beaten
½ cup fresh breadcrumbs
1 lemon, bested
1 tabs mint, chopped
1 tabs coriander (or basil), chopped
1 onion, finely chopped
2 teaspoons chilli
Yoghurt dipping sauce:
1 cup non fat plain yoghurt
1 tabs sweet chilli sauce
1 tabs mint, chopped
1 tabs coriander or basil, chopped
Combine all ingredients and chill.
Method
- If you have food processor, process chicken breast then add rest of ingredients and blend until well combined
- Chill the mixture for 10-15 minutes in the fridge.
- Form into small balls, about a heaped tablespoon.
- Place in top of steamer basket over simmering water and cook for about 8-10 minutes.
- Serve with dipping sauce
