Ingredients
4 pieces of alfoil
4 pieces firm fish no more than 150gms each
1 red pepper, finely sliced in strips
1 carrot, finely sliced in strips
1 green pepper, finely sliced in strips
Coriander
2 cloves Garlic, crushed
1 cm piece Ginger, sliced
1 Lemon, grated rind and juice
Ground black pepper
Method
- Spray alfoil with a little oil. Place a piece of fish on centre of each piece of alfoil
- Combine lemon juice & rind, garlic, ginger and coriander. Pour evenly over each piece of fish.
- Scatter peppers and carrot over top. Wrap fish into parcel.
- Place in bamboo steamer, over simmering water for 10-15 minutes or until fish firm to touch.
- Serve with steamed green vegetables.
