Fish Parcels (SERVES 4) Recipes

Ingredients

4 pieces of alfoil
4 pieces firm fish no more than 150gms each
1 red pepper, finely sliced in strips
1 carrot, finely sliced in strips
1 green pepper, finely sliced in strips
Coriander
2 cloves Garlic, crushed
1 cm piece Ginger, sliced
1 Lemon, grated rind and juice
Ground black pepper

Method

  1. Spray alfoil with a little oil. Place a piece of fish on centre of each piece of alfoil
  2. Combine lemon juice & rind, garlic, ginger and coriander. Pour evenly over each piece of fish.
  3. Scatter peppers and carrot over top. Wrap fish into parcel.
  4. Place in bamboo steamer, over simmering water for 10-15 minutes or until fish firm to touch.
  5. Serve with steamed green vegetables.
