Ingredients
½ tablespoon oil (sesame & olive)
4 eggs, lightly beaten
250gms fesh or frozen mixed vegetables
2 tablespoons chives, finely chopped
2 tablespoons coriander, finely chopped
2 tablespoons sweet chilli sauce
Method
1. Heat oil in fry pan, add vegetables and cook until soft, about 3-4 minutes.
2. Mix chives and coriander together with beaten eggs and pour evenly over vegetables. Cook until just set.
3. Place under pre-heated grill until golden brown.
4. Divide into two, serve on a bed of rocket and drizzle with sweet chilli sauce and a sprinkling of herbs.
