Ingredients
250gms chicken mince
1 onion, thinly sliced
1 teaspoon garlic, crushed
1 teaspoon ginger, grated
1 red pepper, thinly sliced
1 bunch bok choy, thinly sliced
1 carrot, grated and thinly sliced
1 425gm can stir fry vegetables (bean shoots, water chestnuts,corn etc), drained and rinsed
Lettuce cups
2 tablespoons soy sauce
2 tablespoons sweet chilli sauce
2 tablespoons coriander, finely chopped
Method
- Heat wok and spray with a little oil. Add onion, garlic and ginger and fry until fragrant
- Add chicken cook for 2 minutes stirring and breaking up mince as you stir.
- Add red pepper, bok choy, carrot, can vegetables soy sauce and sweet chilli sauce.
- Cook for 2-3 minutes
- Add coriander and stir through.
- Put a spoonful in lettuce cup and enjoy.
