Ingredients
1 egg
2 egg whites
½ cup baby spinach, roughly chopped
1 large mushroom, chopped
1 tablespoon grated reduced fat cheddar cheese
Salt & pepper
Method
1. Heat a non-stick fry pan and spray lightly with olive oil spray.
2. Lightly whisk egg and egg whites. Pour into pan and cook until almost set. Lift edges of eggs to help cook.
3. To one half of omelete, add spinach, mushroom and cheese, and season with salt and pepper.
4. Lift one sides of omelet and flip over other half and cook for a further 2 minutes.

* You can be as creative as you like and add any of your favorite herbs and vegetables. Reduced fat fetta, cottage or ricotta cheese are also good substitutes for cheese.
