Ingredients
500grams lean beef mince
¼ cup each chopped onion, grated carrot & zucchini
1 clove garlic, crushed
2 tablespoons each chopped parsley & basil
½ teaspoon cumin
2 tablespoons tomato sauce
1 tablespoon Worcestershire sauce
1 egg white
Low GI bread or rolls/grilled eggplant slices
Tips for Toppings:
Salsa
Low fat tzatsiki dip
Non fat yoghurt mixed with seeded mustard
Tomato
Beetroot
Cucumber
Lettuce/rocket
Grated carrot
Method
- If using eggplant instead of bread, cut eggplant into thick slices, spray with a little olive oil and bake in oven until golden brown on both sides, about 15-20 minutes.
- Squeeze excess juice out of zucchini.
- Mix together all ingredients, except mince.
- Add mince and using hands, mix well. (Try not to over handle).
- Divide mixture into 4 and shape into balls.
- Heat a large non-stick fry pan of BBQ. Spray with a little olive oil. Put burgers in pan and squash flat with spatula.
- Cook each side for about 3-4 minutes. When juices run clear, burgers are cooked.
- Make hamburgers, using some of topping suggestions above.
