PRAWN AND NOODLE SALAD Recipes

Ingredients

1 cup cooked noodles
250gms cooked prawns
1 red pepper, cut into chunks
1 small Lebanese cucumber, cut into chunks
½ small onion, finely chopped
1 cup Chinese cabbage, sliced finely
2 tablespoons mint, chopped finely
2 tablespoons coriander, finely chopped
½ lime, juice and rind
1 tspn brown sugar
1 tablespoon fish sauce
½ tablespoon water

Method

  1. Mix together lime juice and rind,, sugar, fish sauce and water.
  2. Combine rest of ingredients and toss through dressing.
