Ingredients
1 cup quinoa
1 cup stock
2 cups mixed green vegetables (asparagus, broccoli, beans, spinach)
1 cup peas
½ small red onion
¼ cup walnuts
2 tbspns olive oil
1 tbspns balsamic
2 teaspoons seed mustard
½ tspn garlic
½ teaspoon chilli (optional)
Method
- Cover quinoa with water and leave 2-3 minutes.
- Strain and rinse quinoa and put in pan with stock, peas and onion.
- Bring to boil, cover and steam for 12-15 minutes.
- Add mixed greens and cook another 10 minutes.
- Combine oil, balsamic, mustard, garlic and chilli.
- Toss walnuts and dressing through.
