SMOKED SALMON, SPINACH, POACHED EGGS AND SWEET POTATO Recipes

Ingredients

200gms smoked salmon or ham
2 eggs
1 cup baby spinach
1 sweet potato, peeled and sliced into thin slices
¼ cup no-fat yoghurt
1 teaspoon seeded mustard
2 slices wholegrain sourdough

Method

  1. Bring 1 cup of water to boil with a dash of white vinegar to boil.
  2. Grill sweet potato
  3. Crack eggs into boiling water, cook the way you like.
  4. Toast bread
  5. Combine yoghurt and mustard.
  6. Place toast on plate, top with sweet potato, spinach, smoked salmon or ham, egg and yoghurt dressing.
  7. Season to taste.
