Ingredients
200gms smoked salmon or ham
2 eggs
1 cup baby spinach
1 sweet potato, peeled and sliced into thin slices
¼ cup no-fat yoghurt
1 teaspoon seeded mustard
2 slices wholegrain sourdough
Method
- Bring 1 cup of water to boil with a dash of white vinegar to boil.
- Grill sweet potato
- Crack eggs into boiling water, cook the way you like.
- Toast bread
- Combine yoghurt and mustard.
- Place toast on plate, top with sweet potato, spinach, smoked salmon or ham, egg and yoghurt dressing.
- Season to taste.
