Ingredients
250g packet 2 minute basmati brown rice
2 cups frozen stir fry vegetables
100g turkey breast
1 onion, finely chopped
1 teaspoon minced garlic & ginger
Method
1. Cook rice according to instructions on packet.
2. Heat a non-stick pan; add onion, minced ginger and garlic. Cook for 1 minute.
3. Add vegetables and cook for a further 2 minutes.
4. Add rice and turkey and heat through.
5. Top with a little soy sauce or chilli sauce.
