TUNA AND RICOTTA STUFFED MUSHROOMS AND PEPPERS Recipes

Ingredients

4 large mushrooms or thin skinned peppers
200gms ricotta
50gms feta
3 tablespoons pesto
½ punnet cherry tomatoes
185gm tin tuna, drained

Method

  1. Preheat oven to 180 dgrees
  2. Chop tomatoes in half.
  3. Mix together tomatoes, tuna, ricotta, feta and pesto.
  4. Season to taste
  5. Cut stalks out of mushrooms and if using peppers cut in half lengthways and cut out seeds.
  6. Divide tuna mix between mushrooms or peppers and bake in oven for 20 minutes.
