Ingredients
4 large mushrooms or thin skinned peppers
200gms ricotta
50gms feta
3 tablespoons pesto
½ punnet cherry tomatoes
185gm tin tuna, drained
Method
- Preheat oven to 180 dgrees
- Chop tomatoes in half.
- Mix together tomatoes, tuna, ricotta, feta and pesto.
- Season to taste
- Cut stalks out of mushrooms and if using peppers cut in half lengthways and cut out seeds.
- Divide tuna mix between mushrooms or peppers and bake in oven for 20 minutes.
